Beatrix Potter’s Special Christmas Fudgy Pudding Cake
(SERVES: 6 – PREHEAT oven to 350 degrees – BAKE for 45 minutes)
Step 1
MIX: the following dry ingredients in a small bowl & stir lightly w/ a fork until thoroughly mixed:
- 1 cup white flour
- ¾ cup wheat germ
- ¾ cup granulated sugar
- 2 tsp. baking powder
- ¼ tsp. salt
Step 2
MELT: 2 Tablespoons butter (or margarine) in small saucepan and add above dry ingredients
Step 3
MIX & ADD: ⅔ cup milk & 1 tsp. vanilla (add to dry ingredients mixture)
Step 4
POUR: batter into uncreased 8′ square pan
Step 5
STIR & SPRINKLE: 1 cup brown sugar & ½ cup cocoa (or carob) over batter
Step 6
POUR: gently pour 2 cups hot tap water over the brown sugar mixture (DO NOT STIR)
SETP 7
BAKE: 350 for 45 minutes and serve warm with whipped cream. ENJOY!
This is one of my husband’s family recipes. They have enjoyed it for years and when my sister-in-law made it for us recently I couldn’t stop thinking about it. What a comforting wonderful recipe. This can be popped in the oven as you sit down for dinner and the delicious chocolatey smell will keep everyone leaving room for dessert. This would be great year round – but especially yummy in cooler months.
