Our family loves Mexican food. My mom made it a lot and we still enjoy it today. Truth be told, my Mom could live on it. One of the most popular dishes in our household growing up was something my Mom’s family always called MEXICAN MOUNTAINS. It’s basically a way of taking all of your favorite Mexican food cravings and piling them up as a big salad {or mountain in this case}! These are great for a party or crowd because you can set out a bunch of ingredients and everyone can make them to their preference.
I usually have a ton of these ingredients left-over after Game Day or a Taco Night in our house…so this is a great way to eat up all those LEFTOVERS! I hope you enjoy this Taco Salad as much as our family does. See below for how we make them!
Mexican Mountains (a Taco Salad sort-of)
Ingredients:
-Taco Meat {prepared to your preferences…we usually brown ground beef or turkey and add taco seasoning…my mom loves to add a can of re-fried beans right into the mix}
-Tortilla Chips and/or Frito’s
-Lettuce {torn and/or shredded Cabbage}
-Cheese {shredded- whatever kind you like}
-Tomatoes
-Cilantro {chopped}
-Onions {I prefer green onion or red onion for this}
-Avocado or Guacamole
-Sour Cream
-Salsa
Any other ingredients you prefer such as sliced Black Olives, Jalapenos, Beans, Mexican Rice {the possibilities are endless}
How to Make It:
Simply start by layering the chips on the bottom of a large plate {we break them up into smaller pieces in our hands to make them more “bite-size”}
Then add the meat on top of the chips and pile on the rest of the ingredients you love until you have a mountain of Mexican food deliciousness! Enjoy!
