I know there are a lot of versions of this type of snack (and names). My sweet friend Courtney calls them “Muffin Balls”. She gave me this recipe years ago and I’ve never tried another “energy ball” recipe since. Why mess with a good thing? They are consistently good and my kids like them too. I tend to make them more in the summer- but they really are great year round. I enjoy making them on a meal prep day and then pulling a few out at a time to enjoy. They do keep for about 2 weeks in the fridge- but we love them so much that I don’t think they have ever lasted that long!
Ingredients:
-1/2 cup peanut butter
-1/2 cup oats (quick oatmeal works fine- just make sure it’s the regular oatmeal)
-1 cup coconut (shredded)
-1/2 cup ground flaxseed
1/3 cup honey
-1/3 cup mini chocolate chips
-1 tsp. vanilla extract
*some powdered collagen can be added too
Directions:
Mix all ingredients in hand mixer, with a large spoon, or by hand – it may take a few minutes to fully combine. Chill for 30 minutes and then roll into balls (about the size of a ping pong ball is just right for my taste). Store chilled in the fridge for up to 2 weeks. ENJOY!
